(-)-Carvone | C10H14O | CID 439570 - structure, chemical names, physical and chemical properties, classification, patents, literature, biological activities, safety/hazards/toxicity information, supplier lists, and more. Carvone forms two mirror image forms or enantiomers: R-(–)-carvone, or L-carvone, has a sweetish minty smell, like spearmint leaves. Its mirror image, S -(+)-carvone, or D-carvone, has a spicy aroma with notes of rye, like caraway seeds. Structures of (4 S)- (+)-carvone (104′) and (4 R)- (−)-carvone (104). Carvone occurs as (+)-carvone (104), (−)-carvone (104′) (Scheme 103), or racemic carvone.

Carvone occurs as (+)-carvone (104), (−)-carvone (104′) (Scheme 103), or racemic carvone. (S)- (+)-Carvone (104) is the major component of caraway oil (∼60%) and dill oil and has a herbaceous odor reminiscent of caraway and dill seeds. In the case of carvone, it is clear that there is one asymmetric carbon atom (Figure 2). So there are two enantiomers, both found in nature, that are mirror images of each other. One is labeled R, the other S. Don't ask.

I don't understand why this is a chiral carbon, to my understanding a chiral carbon is a carbon with 4 different chemical groups attached to it.

It is also used in chemical #synthesis as a precursor to #carvone and as a renewables-based solvent in #cleaning products. Chlordiazepoxide structure.svg.

(S)- (+)-carvone (shown here), a naturally occurring compound found in caraway seeds and mandarin orange peel oil, smells like caraway. Its mirror image, (R)- (–)-carvone, is extracted from spearmint and kuromoji oils and smells like spearmint. Gingergrass oil contains a mixture of both enantiomers.
